Carrot Cake Energy Balls

A wholesome, nutrient-packed snack that’s perfect for a quick energy boost!

Ingredients:

Vegetable:

  • 1 cup carrot – peeled and chopped       (about 2 medium carrots)

Dry Ingredients:

  • ½ cup walnuts
  • 2 tbsp flaxseed meal
  • ⅔ cup dry shredded coconut
  • 1 cup oats (instant or rolled)
  • ¼ tsp fresh ginger – grated
  • 2 tsp cinnamon

Wet Ingredients:

  • ½ cup soft pitted dates (Deglet or Medjool)
  • ¼ cup almond butter (or other nut butter)
  • 1 tsp vanilla
  • 1 tbsp maple syrup (optional)

Instructions:

  1. Pulse carrots in a food processor until finely chopped. Set aside.
  2. Blend dry ingredients until a fine flour forms.
  3. Add remaining ingredients and blend until a sticky dough forms.
  4. Roll into ~16 balls and coat in coconut.
  5. Chill 15 minutes or enjoy immediately.

Tip: Store in the fridge up to 1 week or freeze and thaw before enjoying.
