Carrot Cake Energy Balls
A wholesome, nutrient-packed snack that’s perfect for a quick energy boost!
Ingredients:
Vegetable:
- 1 cup carrot – peeled and chopped (about 2 medium carrots)
Dry Ingredients:
- ½ cup walnuts
- 2 tbsp flaxseed meal
- ⅔ cup dry shredded coconut
- 1 cup oats (instant or rolled)
- ¼ tsp fresh ginger – grated
- 2 tsp cinnamon
Wet Ingredients:
- ½ cup soft pitted dates (Deglet or Medjool)
- ¼ cup almond butter (or other nut butter)
- 1 tsp vanilla
- 1 tbsp maple syrup (optional)
Instructions:
- Pulse carrots in a food processor until finely chopped. Set aside.
- Blend dry ingredients until a fine flour forms.
- Add remaining ingredients and blend until a sticky dough forms.
- Roll into ~16 balls and coat in coconut.
- Chill 15 minutes or enjoy immediately.
Tip: Store in the fridge up to 1 week or freeze and thaw before enjoying.
