Arugula Salad: Mango, Macadamia and Avocado
Arugula is one of our favourite greens for a fresh appetite-stimulating salad. It’s now in season and available everywhere. If you find that Arugula is too bitter for you to enjoy (as it can be later in the summer months), don’t throw it out! A simple squeeze of lemon and a pinch of salt can help neutralize some of the bitterness within a few minutes. It is one of the best greens to help stimulate your natural digestive enzymes and makes a healthful addition to every meal.
Arugula Salad Ingredients:
- 1 large mango, cubed
- 1 avocado, diced
- 3/4 cup macadamia nuts, roasted/salted
- 5 cups fresh arugula
- 1/4 cup lemon juice
- 2 tablespoons apple cider vinegar
- 1/4 cup olive oil
- 1 tablespoon Dijon mustard
- 1 teaspoon agave syrup
- pepper and a dash of garlic powder to taste
Whisk together all the salad dressing ingredients and toss with the salad ingredients, except for the arugula. Pour over the arugula when you are ready to serve. Enjoy!!
